= Caramelize Onions

Melt @sausage drippings{2%tbsp} (from cooking Toad in the Hole) or butter in a #saucepan{} over medium-low heat.

Add thinly sliced @large onions{2} and a pinch of @sugar{1%pinch}.

Cook slowly for ~{15-20%minutes}, stirring occasionally, until the onions are soft, sweet, and deeply golden brown. (Do not rush this step—slow caramelization creates the flavor foundation).

= Roux & Stock

Sprinkle @plain flour{2%tbsp} evenly over the caramelized onions. Stir constantly with a wooden spoon for ~{1-2%minutes} to cook out the raw flour taste.

Gradually pour in hot @beef stock{500%ml} in a steady stream while whisking continuously with a #whisk{} to prevent lumps from forming.

Bring the gravy to a gentle simmer. Cook for ~{5-10%minutes}, stirring occasionally, until thickened and glossy.

Stir in @Worcestershire sauce{1%tsp} (or a splash of balsamic vinegar). Season to taste with @salt{} and freshly ground @black pepper{}.

= Bisto Finish

In a #small bowl{}, mix @Bisto gravy granules{2%tsp} with @hot water{2%tbsp} until a smooth, lump-free slurry forms.

Stir the Bisto slurry into the simmering gravy. Cook for another ~{1-2%minutes} until rich, dark, and glossy.

Serve immediately, generously ladled over Toad in the Hole, bangers and mash, or roast beef.
